Potato Latkes
You will need: 3-4 potatoes, 1/2 yellow onion, 1 egg, 2 tablespoons breadcrumbs or matzo meal, 1 teaspoon kosher salt, punch of black pepper, olive oil and applesauce.
Directions:
Wash potatoes and grate each one by hand. Then dice the onion into small pieces.
Get as much liquid out of the onion and potato combo as possible. The more water you are able to extract the crispier the latkes will be.
Add potatoes, onion, egg, matzo meal or breadcrumbs, salt & pepper into a bowl and combine altogether with your hands to make sure potato starch breaks up evenly. Then set aside for 10 minutes.
Heat oil on high in large flat pan, very important the oil is HOT before cooking the latkes. Form small, thin patty’s out of the potato mixture and put each directly on the pan. Don’t flip over until you see golden brown color on bottom of the latkes. About 4-5 minutes on each side.
Drain each finished latke on a plate with paper towel lining. Then serve with applesauce and enjoy!
