Roasted Brussel Sprouts & Quinoa

You will need: shredded brussel sprouts, salt, pepper, 1 cup quinoa, 2 teaspoons minced garlic, 1/2 teaspoon mustard, 1/2 cup chopped parsley, 1/4 cup balsamic vinegar, 1/2 cup chopped red onion, 4 teaspoon extra virgin olive oil.

Directions:

  1. Preheat oven to 450 and roast brussel sprouts with salt, pepper & olive oil for 30-40 minutes.

  2. Cook quinoa according to package, drain to get out excess water and add in 2 tablespoons olive oil- mix well to coat evenly.

  3. Sauté red onion until translucent then add in quinoa on medium-high heat and use wooden spoon. The idea is to crisp the quinoa so it’s crunchy. Then add in brussel sprouts and mix altogether in sauté pan. Add in garlic, salt & pepper.

  4. In separate bowl whisk vinegar and mustard together then add to the quinoa pan and mix altogether. When combined well, put in large bowl and add parsley for garnish. Enjoy!
