GG’s Brisket
INGREDIENTS:
2-3 large yellow onions (depending on size of brisket)
1 brisket (ask butcher for first cut)
1 garlic clove
salt
DIRECTIONS:
1. Slice onions and sauté in pan that you will cook brisket in until golden. Make sure this pan has a tight fitting lid.
2. Heat up a grill or grill pan on high. When very hot, lower to medium heat and sear brisket. About 2-3 min on each side. You will know one side is done when it does not stick to grill.
3. Lower onions to simmer and place seared brisket on top. Cover and let simmer for 30 minutes. At 30 minutes check how much liquid is in pot. If very little, add water slowly. If there is enough liquid just let simmer.
4. Brisket cooks on simmer for 3-4 hours. If water keeps evaporating keep adding more very slowly in order to create enough gravy.
5. {optional} add white wine instead of water for extra flavor.
6. When brisket is done, let completely cool before putting it in refrigerator. The reason you do this 24 hours in advance of eating is because brisket must be COMPLETELY cool before slicing otherwise it will shred!
7. Next day you can slice and reheat either in oven or stove top with gravy. Another option is to heat the gravy not the brisket and then pour on top. ENJOY!
