MUSHROOM CHICKEN  


INGREDIENTS:

1 package breast cutlets

1 cup quinoa flour

2 cups sliced mushrooms 

2 tablespoons olive oil 

1/3 cup white wine or chicken broth

DIRECTIONS:

  1. Slice the cutlets in half to make them as thin as possible & trim the excess fat.

  2. Place the flour in a bowl, season the chicken with salt & pepper, then lightly coat chicken on both sides with flour.

  3. Heat oil in large pan on medium-high heat and cook all chicken then put in plate and set aside.

  4. Turn heat down to medium and cook mushrooms in same pan, when mushrooms finished cooking add in wine or broth to deglaze pan.

  5. Add chicken back into pan with mushrooms and cook until sauce has thickened (2-3 minutes)
